Ingredients:
- 2 cups gluten-free all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup cold unsalted butter, cubed
- 3/4 cup buttermilk or dairy-free alternative
Instructions:
Preheat oven to 425F 220C and line a baking sheet with parchment paper
In a large mixing bowl, whisk together gluten-free flour, baking powder, baking soda, and salt
Add the cold cubed butter to the dry ingredients
Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs
Pour in the buttermilk and stir until just combined
Be careful not to overmix
Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together
Pat the dough into a circle about 1 inch thick
Use a biscuit cutter to cut out biscuits, rerolling scraps as needed
Place the biscuits onto the prepared baking sheet, leaving a little space between each
Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top
Remove from the oven and let cool slightly before serving
