Gluten-Free Biscuits



These gluten-free biscuits are light, fluffy, and perfect for serving alongside your favorite meals. They're easy to make and have a delicious buttery flavor.

Ingredients:

  • 2 cups gluten-free all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cold unsalted butter, cubed
  • 3/4 cup buttermilk or dairy-free alternative

Instructions:

Preheat oven to 425F 220C and line a baking sheet with parchment paper

In a large mixing bowl, whisk together gluten-free flour, baking powder, baking soda, and salt

Add the cold cubed butter to the dry ingredients

Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs

Pour in the buttermilk and stir until just combined

Be careful not to overmix

Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together

Pat the dough into a circle about 1 inch thick

Use a biscuit cutter to cut out biscuits, rerolling scraps as needed

Place the biscuits onto the prepared baking sheet, leaving a little space between each

Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown on top

Remove from the oven and let cool slightly before serving

Gluten-Free Leek and Potato Soup



This gluten-free leek and potato soup is a comforting and hearty dish perfect for cold days. The combination of leeks and potatoes creates a creamy texture without the need for any gluten-containing ingredients. It's simple to make and bursting with flavor.

Ingredients:

  • 3 leeks, washed and sliced
  • 3 medium potatoes, peeled and diced
  • 4 cups gluten-free vegetable broth
  • 1 cup water
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish optional

Instructions:

In a large pot, heat olive oil over medium heat

Add sliced leeks and saut until softened, about 5 minutes

Add diced potatoes, vegetable broth, and water

Bring to a boil

Reduce heat to low, cover, and simmer for 20-25 minutes, or until potatoes are tender

Using an immersion blender, blend the soup until smooth

Alternatively, transfer the soup to a blender in batches and blend until smooth

Season with salt and pepper to taste

Serve hot, garnished with chopped fresh parsley if desired
