Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 2 lemons, juiced and zested
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 3 egg yolks
- 1 cup water
- 1/4 cup sweetened condensed milk
- 1/2 teaspoon vanilla extract
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar
Instructions:
Start by heating the oven to 350F 175C
Put the powdered sugar, softened unsalted butter, and all-purpose flour in a bowl and mix them together
Mix until you get a dough
To make mini tart shells, press the dough into a mini muffin tin that has been greased
The tart shells should be baked in a hot oven for 10 to 12 minutes, or until they are lightly golden
Mix the lemon juice, lemon zest, cornstarch, salt, and 1/2 cup of granulated sugar in a saucepan
Add the egg yolks and water to a different bowl and mix them together using a whisk
Slowly add this mixture to the saucepan while stirring all the time
While cooking the lemon mixture over medium-low heat, keep stirring it until it gets thicker and more like pudding
After taking the lemon filling off the heat, add the sweetened condensed milk and vanilla extract and mix them together
Fill the baked tart shells with the lemon filling
Beat the egg whites and cream of tartar together in a clean bowl until they become foamy
Slowly add 1/2 cup of granulated sugar while beating until stiff peaks form
Put some meringue on top of each lemon-filled tart
The lemon meringue pie bites should be baked for another 10 to 12 minutes, or until the meringue is just beginning to brown
