Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 4 tablespoons pesto sauce
- 4 slices mozzarella cheese
- 8 slices ciabatta bread
- 2 tablespoons olive oil
- 1 cup baby arugula leaves
Instructions:
Preheat grill to medium-high heat
Season chicken breasts with salt and pepper
Grill chicken for 6-8 minutes per side or until cooked through
Spread 1 tablespoon of pesto sauce on each chicken breast during the last minute of grilling
During the last 2 minutes of grilling, place a slice of mozzarella cheese on top of each chicken breast and allow it to melt
While chicken is grilling, lightly brush olive oil on both sides of ciabatta bread slices
Grill bread for 1-2 minutes per side until lightly toasted
To assemble sandwiches, place grilled chicken with melted cheese on the bottom half of each ciabatta slice
Top with baby arugula leaves and cover with the remaining ciabatta slices
Slice sandwiches in half and serve immediately
