Ingredients:
- 8 slices thick-cut bacon
- 1/4 cup brown sugar
- 8 slices hearty white bread
- 4 tablespoons unsalted butter, softened
- 8 ounces Brie cheese, thinly sliced
- 2 tablespoons honey
- 1 teaspoon fresh thyme leaves
Instructions:
Preheat oven to 375F 190C
Line a baking sheet with parchment paper
Arrange bacon slices on the prepared baking sheet
Sprinkle brown sugar evenly over the bacon slices
Bake in the preheated oven for 15-20 minutes, or until bacon is crispy and caramelized
Remove bacon from oven and let it cool
Once cooled, chop into small pieces
Spread softened butter on one side of each bread slice
Place half of the bread slices, buttered side down, on a clean work surface
Top each bread slice with slices of Brie cheese
Sprinkle candied bacon pieces over the cheese
Drizzle honey evenly over the bacon
Sprinkle fresh thyme leaves on top
Top each sandwich with remaining bread slices, buttered side up
Heat a large skillet or griddle over medium heat
Place sandwiches in the skillet and cook for 3-4 minutes on each side, or until bread is golden brown and cheese is melted
Remove sandwiches from skillet and let them cool slightly before serving
