Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup vegan butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vegan chocolate chips
Instructions:
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
In a large mixing bowl, cream the softened vegan butter, brown sugar, and granulated sugar until well combined
Add the unsweetened applesauce and vanilla extract to the bowl, and mix until smooth
Sift in the all-purpose flour, baking soda, and salt into the wet ingredients
Stir until a soft dough forms
Fold in the vegan chocolate chips until evenly distributed throughout the dough
Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie
Flatten each cookie slightly with the back of the spoon
Bake the cookies in the preheated oven for 10-12 minutes or until the edges turn golden brown
Remove the baking sheet from the oven and let the cookies cool for a few minutes before transferring them to a wire rack to cool completely
